To start my blog, I choose my better half’s favorite dish: creamy corn chowder soup.
Chowder is a comfort food consisting of sweet corn, creamy potato, and blend of Mediterranean flavors. The best part is you can cook and serve it within 30 minutes max! As I am a very lazy person, this recipe comes very handy when I want to spend less time in the kitchen but still want to have a nice and nutritious dinner.
Please know that there are a lot of recipes out there for corn chowder. But this is the way, I cook it and he loves it!

Ingredients
- Sweet corn: One cob
- Potato: One, large
- Spring onion: One sprig
- Milk: One cup
- Butter: One teaspoon
- Crushed black pepper: One teaspoon
- Salt: To taste
- Cream: One tablespoon (Optional)
Serves two in seven easy steps:
- Boil sweet corn and potato until both are soft and tender. If you are using cooker, boil them for 5 to 10 mins or till you hear three three whistles!
- After it is cooked, peel the potato skin and chop it into small pieces.
- Remove the kernels from the corn cob.
- In a small pan, add butter. After heating it, add chopped spring onions and sauté them till the raw smell of spring onion vanishes into thin air.
- In a blender, add the potato pieces, kernels, sautéed spring onions, crushed pepper, milk, and salt to taste.
- Blend it till the mixture is smooth and creamy. You may want to add cream, if you are looking for that extra, rich smoothness.
- Transfer it to a bowl and its ready to serve!
